Melting Moments
I used to love eating melting moments (aka snowball cookies) as a kid. After I found out how much butter goes into them, I've cut back how much I 'taste test' before giving them away. They're slightly-sweet, super-crumbly, extra-buttery cookies that pair well with coffee or tea. Some people complain that they're a little dry, but I enjoy their melt-in-your-mouth texture.

Ingredients:
- 1 c. flour
- 1/2 c. constarch
- 1/2 c. powdered sugar
- 3/4 c. (1-1/2 sticks) butter
- 1 tsp vanilla
- 1/4 c. powdered sugar for dusting (optional)
- 1/4 c. finely chopped nuts (walnuts, almonds, macadamia nuts, etc) (optional)
- Mix dry ingredients well in a small bowl
- Beat butter with mixer on medium speed until fluffy
- Add vanilla to butter
- Mix in dry to wet ingredients
- Stir in nuts
- Refrigerate for several hours and up to two days
- Preheat oven to 300 degrees Fahrenheit
- Remove dough from fridge and let it thaw for 15 minutes before rolling into 24 1-inch balls
- Bake for 25-30 minutes
- Dust cookies with powdered sugar while they are still warm
- If you're short on time, refrigeration isn't necessary but the dough will be harder to handle and the cookie will have a hollow center.
- Adding in nuts will make the recipe more similar to Mexican Wedding Cakes
