When life gives you a lot of lemons....

make a lot of lemonade - or freeze them for later!


Buying in bulk is a great idea, but using everything before it goes bad is half the battle. I don't know of many people who can use a Costco-size bag of lemons before they expire. Lemon-cubes are convenient for cooking and baking when you don't have fresh lemons lying around the house.

You'll need:
  • Lemons
  • Juicer (hands work fine too)
  • Strainer/sifter
  • Ice trays
  • Measuring cup
  • Freezer-safe containers
Instructions:
  1.  Measure the amount of liquid needed to fill a tray. (This will help you plan ahead if you need to freeze the lemon juice in batches.)
  2. Juice the lemons, strain, and pour into the ice tray(s).
  3. Freeze the lemon juice. 
  4. After the lemon-cubes are set, transfer them to freezer safe containers.

 Lemon-cubes will last about 3 months (in my freezer they're used up by that time so I can't validate that they will last any longer than that). The same principle can be used for most other fruits. I've also frozen passion fruit (lilikoi) juice and have gotten great results.

As a side note, I've found that my ice tray has a capacity of 1 cup and generates 16 lemon-cubes per tray so 1 lemon-cube is approximately 1 Tablespoon. Very handy!
